For Rice

3 Cups Califower

1 Cup Pistachios

½ tsp salt

2 Tbs chives

½ Cup black sesame seeds

1Tbs olive oil

• Put all ingredients in food processor and pulse until rice like.

Marinated mushrooms

7 Button or Shitake Mushrooms

1/8 Cup apple cider vinegar

1/4 cup olive oil

• Wipe and chop mushrooms, cut off tale and marinate for a few hours


• Put nori sheet on a rolling mat

• Place rice to edge but not to bottom

• Place other filling ingredients ontop

• Roll away from you

For Filling

you can be flexible : use avocado, sprouts, capsicum, tomato, carrots, beetroot.

Dipping Sauce

½ cup barley miso

2 Tbs cider apple vinegar

1 inch ginger peeled

2 Tbs maple syrup

½ clove garlic

2 Tbs water

2 1/2 Tbs sesame oil

• Blend all ingredients in high speed blender (will keep in fridge for 2 weeks)
